Steaming or boiling vegetables feels like the responsible default — better digestion, safer, more sensible than eating them raw. For a handful of specific vegetables, that default actively destroys the exact compound that made them worth eating in the first place. Broccoli is the clearest example.
The Twist: The Enzyme That Matters Doesn't Survive Heat
Broccoli contains an enzyme called myrosinase, which converts compounds called glucosinolates into sulforaphane — the compound broccoli's health reputation largely rests on. That enzyme is heat-sensitive, and strong cooking sharply reduces its activity. The numbers make the gap concrete: sulforaphane bioavailability from raw broccoli runs around 37%, compared to roughly 3.4% once it's been cooked. That's not a small difference — it's most of the compound's usefulness disappearing with heat.
This doesn't mean broccoli has to be eaten raw or not at all. Light steaming, rather than full boiling, leaves glucosinolate content nearly untouched — a middle ground that preserves most of the benefit without committing to raw broccoli for every meal.
Bell Peppers: The Real Threat Is Water, Not Heat
Some bell pepper varieties carry more vitamin C by weight than oranges. Vitamin C is a classic water-soluble vitamin, and it's actually more sensitive to how long it sits in water than to heat exposure itself. Blanching bell peppers or cooking them in a lot of liquid for an extended time leaches out more vitamin C than the heat alone would ever account for. Raw slices or a quick stir-fry preserve that content far better than a longer, water-based cooking method.
Radish: Another Heat-Sensitive Enzyme
Radish contains diastase, an amylase-family enzyme that helps digest carbohydrates. Like broccoli's myrosinase, it's heat-sensitive and loses activity quickly under high cooking temperatures. Grating radish raw or juicing it preserves that enzyme intact, which is the whole reason radish is traditionally paired with heavier, starch-based meals as a digestive aid.
The Trap: Picking One Extreme Instead of Matching the Vegetable
The costliest mistake here isn't cooking vegetables — it's applying the same rule to all of them regardless of what's actually vulnerable in each one. Water-soluble vitamins and heat-sensitive enzymes generally favor raw or minimally cooked preparation, while some other compounds — certain fat-soluble ones in particular — actually become more available with cooking and a bit of fat. Neither "cook everything" nor "eat everything raw" holds up as a universal rule; the compound at risk in each specific vegetable is what should decide the approach.
One caution worth flagging: raw cruciferous vegetables, broccoli included, can affect thyroid function in some people when eaten in large quantities. Anyone with a thyroid condition is better off moderating raw intake and checking with a doctor about how much and how it's prepared, rather than defaulting to raw across the board.
