Black Spots on an Onion Aren't an Automatic Toss. Peel Back a Layer First.

Black spots or a powdery dark residue on an onion's surface put you at one of two extremes — toss the whole thing on sight, or wipe off what's visible and cook it without checking further. Neither extreme is the right call by itself. There's a specific test that tells you which situation you're actually dealing with: peel back a layer or two and look at what's underneath.

The Twist: Penetration Depth Is What Actually Decides This, Not Presence Alone

Mold on an onion shows up as black spots or a powdery residue on the outer skin. Whether it's salvageable comes down to how deep it's actually penetrated, not just whether mold is visible at all.

If the mold is confined to the outer skin and dry layers, and the flesh underneath is firm with no off smell, peeling those affected layers away, washing thoroughly, and cooking the rest is genuinely fine.

If the flesh itself shows black spotting, feels mushy, or smells off once you've peeled back a layer, the mold has already worked its way into the flesh, and the whole onion should be discarded — regardless of whether you were planning to cook it. Heat doesn't reliably destroy toxins that mold can produce, even when it kills the mold organism itself, so cooking isn't a rescue option once contamination has reached the flesh.

Wash your hands, knife, and cutting board immediately after handling a contaminated onion, whether you ended up salvaging part of it or discarding the whole thing — cross-contamination to whatever's cut next is a real risk either way.

Storage Conditions That Actually Slow This Down

Keep onions below 5°C with good ventilation. Above that threshold, sprouting accelerates, and surface damage along with mold risk rises together with it.

For peeled onions going into the fridge, dry them completely, wrap each one individually in plastic wrap or a paper towel, and seal them in a container in the crisper drawer.

For whole onions, a mesh bag or stocking works well — tie a knot between each onion so they aren't directly touching each other, and hang the bag somewhere shaded. Airflow is the actual variable doing the work here, and keeping the onions from touching prevents moisture or juice from one spoiling onion spreading spoilage to its neighbors.

Keep Onions and Potatoes Apart

Potatoes release a gas that accelerates spoilage in nearby onions. Storing the two together undercuts even a genuinely well-chosen cool, ventilated storage spot — this isn't about finding a better location, it's specifically about keeping these two apart regardless of how good the rest of the setup is.

A Quick Comparison Worth Knowing

Grains and nuts generally prefer under 60% humidity with a stable temperature around 10–15°C. Onions need a meaningfully colder threshold — 5°C or below. Different produce genuinely has different storage requirements, and treating them as interchangeable is part of what leads to unnecessary spoilage.

The Trap: Making a Snap Judgment From the Surface Alone

The costliest habit here is deciding an onion's fate based on what's visible on the outer skin without checking further. Tossing a salvageable onion wastes food for no reason; eating one without checking whether mold reached the flesh is the more serious mistake in the other direction. Peel back a layer, check the flesh for firmness, spotting, and smell, and let that — not the surface alone — make the call.
