A peeled onion, rinsed and placed straight into a sealed container in the fridge, turns slimy within a few days more often than not. It's tempting to blame refrigeration itself for not being enough. The actual issue is the sequence — sealing it while still wet is exactly what traps the moisture responsible for the sliminess in the first place.

Why Peeled Onion Is More Vulnerable Than Whole Onion

Once an onion loses its outer skin, it's lost the protective layer that whole onions rely on to manage moisture. That makes the storage sequence matter far more for peeled onion than it does for a whole one sitting in a mesh bag on the counter.

The Correct Order: Dry, Wrap, Then Seal

Dry the surface completely before anything else. Whatever water clings to the onion after peeling or rinsing needs to be wiped off first — this step alone prevents most of the problem.

Wrap it in a paper towel next. The paper towel absorbs whatever residual humidity builds up inside the fridge, which keeps the surface from turning damp again even after storage.

Seal it last, in an airtight container or a bag with the air pressed out. Sealing before drying and wrapping is what traps moisture with nowhere to go — the exact condition that produces sliminess.

For a cut half specifically, press plastic wrap directly against the cut face to eliminate the air layer sitting against it — this cuts down on both drying out and browning. Wrapping in aluminum foil before placing it in a sealed bag works on the same principle, limiting both light and air exposure.

Where in the Fridge Matters Too

The crisper drawer holds a more stable temperature than the door does. The door swings in temperature every time it's opened, and that swing promotes condensation — moisture forming and reforming on the surface, which pushes things toward slimy faster regardless of how well it was wrapped.

Keep it away from apples and bananas specifically. Both release meaningful amounts of ethylene gas, which accelerates spoilage in nearby produce — onion included.

Knowing When It's Actually Gone Bad

There's no fixed shelf-life number that reliably applies here — checking the onion's actual state matters more than counting days. A rotten or sour smell, a mushy or slimy texture, dark discoloration, or visible mold are all clear signals to discard it rather than try to salvage the unaffected-looking parts.

Freezing for Longer Storage

If you need it to last longer than the fridge allows, freezing is an option. Portion it out, dry it thoroughly, seal it, and freeze. The texture softens considerably after thawing, though, so frozen onion works better in cooked dishes — soups, stir-fries, curries — than in anything meant to be eaten raw.

The Trap: Sealing Before Drying

The costliest mistake here is treating "sealed container" as the whole solution and skipping the drying and wrapping steps that need to happen first. Dry, then wrap, then seal — in that order — along with keeping it in the crisper away from ethylene-producing fruit, is what actually determines whether a peeled onion holds up for days instead of turning slimy within two or three.
