Where the Fishy Smell Actually Comes From

Mackerel's fishy odor develops after the fish is caught, as osmolytes in the flesh break down enzymatically into trimethylamine (TMA), a volatile compound. A brief soak in rice rinse water right after prepping the fish helps reduce this before it ever reaches the pan, which is worth doing before seasoning rather than skipping straight to cooking.

Prep: Season Evenly, Keep the Membrane, Dry It Completely

Use fine salt, not coarse. Fine salt distributes evenly across the flesh and skin, seasoning consistently in a way coarse salt's larger grains don't manage as well. A light coating of oil and some pepper alongside the salt rounds out the base seasoning and helps with odor too.

Don't remove the thin membrane between the flesh and skin. It's tempting to strip it away, but that membrane is what helps the skin stay adhered to the pan as it cooks — which is exactly what produces a genuinely crisp result rather than skin that curls and separates unevenly.

Pat the surface completely dry before it goes anywhere near the pan. Any leftover surface moisture meeting hot oil is a major source of both splattering and a stronger fishy smell as it cooks off suddenly. This step matters more than it seems.

Cooking: Heat, Press, and Leave It Alone

Start the pan at medium-high, then drop to medium-low once the fish is actually in and settled. Place it skin-side down first, and press gently on it for about 10 seconds right after it hits the pan — this keeps the flesh from curling as it cooks, which improves both the final shape and the texture of the finished piece.

Keep the pan uncovered for the entire cook. Resist flipping it more than once — let the sides visibly show roughly 80% doneness before turning it over. Flip it a single time, cook for about 10 more seconds, and pull it off the heat immediately. That final 10-second window matters: push past it and the flesh dries out quickly, undoing the moist interior the rest of the process was building toward.

The Costly Shortcut: Reaching for the Lid Out of Habit

The single habit most likely to undo everything else here is covering the pan because that's the reflex for anything spattering oil. With mackerel specifically, that reflex works against you — the condensation dripping back into hot oil causes more splatter than an open pan ever would, on top of trapping the smell you were trying to contain in the first place. Leave it uncovered, respect the final 10-second window before pulling it off the heat, and mackerel stops being the fish people avoid cooking at home.
