Regrowing Scallions in Water Isn't Luck. A Few Details Decide It.

A leftover scallion base gets stuck in a cup of water on a whim, mostly out of curiosity rather than real expectation. Sometimes new green growth shows up within days. Sometimes it just goes soft and smells off instead. The difference usually isn't luck — it comes down to a few specific details in how the cutting is prepared and cared for.

The Twist: The Roots You're Tempted to Trim Are What Make This Work

Scallion's growth point sits inside the white stem base, and that region needs to stay intact — leave about 4–6cm of white stem along with the roots when cutting. The instinct to tidy up the cutting by trimming the fine root hairs short is exactly what undermines the whole thing. Those root hairs are the actual absorption surface pulling in water and nutrients — cut them back, and you've removed the structure the regrowth depends on before it ever had a chance.

Getting the Environment Right

New growth sprouts best in the 15–25°C range. Water that's too cold slows root activity down; water that's too warm encourages bacterial growth. Room temperature indoors beats the fridge for this reason — the fridge is too cold for active root growth.

Light matters too, but not as much as people assume: bright, indirect light near a window works better than direct sun. Extended direct sunlight raises the water temperature inside the cup and increases the risk of algae building up.

Water level should cover only about two-thirds of the root and base — not up into the white stem above that. Submerging too much of the stem is a common cause of it turning soft and rotting instead of sprouting.

If you're using tap water, let it sit out for about a day first. Chlorine in fresh tap water can interfere with root function, and letting it dissipate overnight removes that risk.

Ongoing Care

Change the water every 3–4 days to keep oxygen available to the roots and limit bacterial buildup — more often than that during summer, since warm water quality degrades faster in the heat. Cloudy or foul-smelling water is a clear rot signal, and it's worth changing the water the moment you notice either one rather than waiting for the next scheduled change.

With reasonably good care, new growth typically appears within 3–5 days, and it's usable in cooking within 1–2 weeks. Harvest only the green tops and leave the base intact in the water — done this way, the same base can regrow and be harvested from multiple times rather than just once.

When to Move It to Soil

Grown in water alone for an extended stretch, the plant eventually runs through the limited nutrients available, and new leaves start coming in smaller, paler, and less fragrant than earlier harvests. That decline is the signal to transplant the base into a small pot of soil — doing so at that point extends both how long it keeps producing and how much you get from it.

Any root trimmings you're not using for propagation don't have to go to waste either — washed and used in stock, or simmered into a simple root tea, they still have some use left in them.

The Trap: Trimming for Tidiness and Ignoring Early Rot Signals

The costliest mistake is treating root-hair trimming as basic cleanup rather than recognizing it as removing the exact structure the regrowth depends on. The second is letting cloudy or smelly water sit unaddressed because the schedule says the next change isn't due yet — by the time it's visibly rotting, the cutting is often past saving. Leave the roots intact, keep the water at the right level and temperature, and change it the moment something looks or smells off, not on a fixed calendar alone.
