Regrowing scallions

Scallion roots left over from cooking get either tossed straight in the trash or dropped into a cup of water for a half-hearted regrow attempt that gives out after one or two thin harvests. Planting that same root end in soil, with the right depth and care, turns it into something closer to an ongoing supply rather than a one-time kitchen trick.

Prep and Sterilizing the Roots

Leave 3–5cm of white stem attached to the root when cutting — up to 10cm or more if you're using a deeper container. Trim away any browned, dried, or blackened dead roots with scissors; leaving them on is what causes rot once the roots are in soil. Disinfect the trimmed roots by soaking them for 2–3 minutes in a solution of 1 tablespoon of vinegar per liter of water.

A styrofoam box at least 20cm deep works well, or a repurposed plastic bottle with 2–3 drainage holes punched in the bottom. Fill it with soil loosely rather than packing it down tightly — compacted soil removes the air pockets roots need for both respiration and drainage.

Bury only the bottom 3cm of the white stem section in soil. Water thoroughly once right after planting, then only 1–2 times a week afterward based on how dry the soil looks.

Light, Temperature, and Building the White Part

15–25°C is the right temperature range for growth, with at least 4 hours of direct sunlight daily — a window ledge or balcony spot works. Starting about 3 weeks after planting, mound soil around the base of the stem 3–4 times over the following weeks; this hilling technique is what helps the white (blanched) portion grow thicker and longer over time. Rice rinse water, or water used to rinse out an emptied milk carton, works as a nutrient boost in place of chemical fertilizer.

When You Can Actually Harvest

Grown to full size, scallions are edible about 40–50 days after planting. If you're only harvesting the green leaf tops rather than waiting for the full plant, that's possible starting 2–4 weeks in. In a styrofoam box setup specifically, a first harvest is often possible around day 10, with a second harvest around day 19–20.

Worth pacing yourself here: repeated harvesting thins and weakens the original stem over time, so cutting too frequently works against the point of setting this up as an ongoing supply in the first place.

The difference between someone who gets a couple of weak harvests from a cup of water and someone who keeps a working scallion patch going on their balcony for months usually comes down to whether the sterilization, planting depth, and hilling steps actually happened — not luck.
