Salt Water Alone Isn't Fully Purging Your Clams

Clams sit in a covered bowl of salt water for the standard purging window, and the finished dish still crunches with grit anyway. Plain salt water gets clams partway there, but it doesn't fully replicate the conditions that actually trigger a clam to expel sand — a couple of small additions to that same water noticeably improve how thoroughly they purge.

Building a More Effective Purge Mixture

Start with the baseline: about 30g of salt per liter of water, roughly matching seawater salinity. To that, add a tablespoon of vinegar and place a stainless steel spoon or utensil directly into the water along with the clams. This combination is widely used specifically because it more closely approximates the clams' natural tidal environment than salt water on its own, and in practice tends to produce noticeably less residual grit.

Darkness Matters as Much as the Water

Clams purge more actively in dark conditions, closer to how they'd behave buried in sand or mud on a tidal flat rather than exposed and visible. Cover the container completely — a dark cloth, a black plastic bag, or a solid lid all work — rather than leaving it out in a lit kitchen. This alone measurably improves how much sand and debris the clams actually expel during the same soak time.

Even a Good Purge Isn't the Last Step

Once purging is done, rub the shells together by hand and rinse under running water until it runs clear. This isn't optional even after a thorough purge with all the right additions — some residual grit typically clings to the shells regardless, and this final rinse is what actually clears it before cooking.

Why This Matters Beyond Texture

Shellfish and other commonly consumed seafood have been found to carry measurable microplastic content — one set of findings put the average around 47 particles per 100g across shellfish, shrimp, and small fish sold domestically. The same research found that a 30-minute salt water purge removed over 90% of that microplastic content. Purging clams properly isn't just about avoiding a gritty bite — it's doing real work on food safety too.

Storage After Purging

For a couple of days: keep live clams refrigerated in water matching the purge salinity, with the lid left off, and use them within 2 days.

For longer storage: boil the clams first, let them cool, and freeze them along with the cooking broth rather than freezing them raw — this holds up much better than trying to freeze live clams directly.

What You're Actually Getting Nutritionally

Handled properly, clams are a genuinely lean, nutrient-dense choice: roughly 101 kcal and about 12g of protein per 100g, alongside 80mg of calcium and 50mg of magnesium.

The Trap: Assuming Plain Salt Water Is a Complete Purge

The costliest habit here is treating any salt-water soak as equivalent, regardless of concentration, additions, or light exposure. Plain salt water in a lit kitchen often leaves real grit behind even after the standard wait time. Getting the salinity right, adding vinegar and a steel utensil, keeping it dark, and finishing with a hand rinse — that full sequence is what actually gets you a clean result, not any single step in isolation.
