Sealing Onions in a Plastic Bag Feels Responsible. It's Working Against You.

Onions bought fresh turn soft or sprout visible green shoots within days, and it's tempting to blame bad luck or a bad batch. More often, the actual cause is a habit that looks protective but does the opposite: sealing them in a plastic bag.

The Twist: Humidity Does More Damage Than Temperature Alone

Mold that affects onions activates around 30°C (86°F), and storage temperatures above 5°C (41°F) make sprouting significantly more likely — but humidity is the variable that tips things over fast. Once humidity climbs past about 90%, the risk of rot rises sharply. A sealed plastic bag, despite feeling like it's shielding the onion from the outside environment, actually traps moisture directly against its skin — creating exactly the humid microclimate that accelerates both mold and rot. Refrigerating onions still in their skin causes a related problem: trapped internal humidity that encourages bacterial growth.

The fix isn't a different container. It's airflow and separation, which is a different problem entirely from just finding "the right place to put them."

What Actually Works: Dry First, Then Store With Air Moving Around Each One

Right after buying, let the skin dry out fully. Take the onions out of their net bag and leave them somewhere ventilated for about a day before storing them properly. Don't wash or peel them at this stage — moisture introduced now works directly against storage life, so save washing and peeling for right before you actually cook with them.

Use the bigger onions first. Larger onions soften and develop mold faster than smaller, firmer ones, so working through them in that order avoids losing the ones that were always going to spoil soonest.

Store them unsealed, with airflow, somewhere cool. A mesh bag hung in a ventilated spot handles this well — but even inside a mesh bag, onions touching each other trap moisture right at the contact point. Tying string between each onion so they hang separated cuts down on both bruising and moisture buildup at once.

No Mesh Bag? A Few Household Substitutes Work Just as Well

Newspaper and a ventilated box: wrap each onion individually in newspaper, then lay them in rows inside a sturdy cardboard box with holes punched in it, kept somewhere cool and airy.

An old stocking or pantyhose leg: drop an onion in, tie a knot, drop in another, tie again — repeating until you've got 6–7 onions per leg, then hang it on a wall. It saves space and keeps airflow moving around each one.

A paper egg carton: place one well-dried onion in each cup so none of them touch. Stack no more than two cartons high, with an empty carton on top to keep weight from concentrating unevenly on the bottom layer.

Whichever method you use, the underlying goal is identical: keep air moving, and keep onions from touching each other directly.

Once an Onion Is Prepped, the Rules Change

A peeled whole onion belongs in an airtight container in the crisper drawer. Cut or partially used onion should be wrapped tightly in foil before going into a sealed bag — the foil specifically helps cut down on moisture loss and browning, more than plastic wrap alone would.

For longer storage, freezing works well: slice the onion, dry the surface, toss it lightly in oil, and seal it in a freezer bag. Done this way, quality holds up for 6–8 months.

The Trap: Throwing Out a Whole Onion Over a Small Mold Spot

Black mold on the outer skin doesn't automatically mean the entire onion is unsalvageable — if the flesh underneath is still firm, peel away a couple of layers, wash it, and cook it thoroughly rather than discarding the whole thing. The real threshold for tossing it entirely is the flesh itself turning soft, not surface mold on skin you were going to peel off regardless.

The same goes for sprouting. Shoots even beyond 5cm long aren't toxic — sweetness drops off, but the green shoots themselves are perfectly usable in place of scallions in a dish. The instinct to discard an onion at the first visible sign of aging often throws away something still entirely fine to eat.
