Soaking Dried Seaweed Longer Makes the Broth Weaker, Not Stronger

Dried seaweed for Korean seaweed soup (miyeokguk) gets left to soak for a long stretch on the assumption that more time in water means more flavor working its way into the final broth. The soup comes out thin and a little flat anyway, which seems to suggest the seaweed just wasn't good quality.

The soaking time was actually working against the broth the whole time.

The Twist: A Long Soak Pulls Flavor Out, Not In

Leaving dried seaweed submerged in plain water for an extended time lets its own umami compounds leach out into that soaking water — water that then gets poured down the drain before the seaweed ever reaches the pot. The longer the soak, the more of that flavor ends up discarded rather than staying in the seaweed where it would actually flavor the soup. The instinct to soak longer for "more flavor" has the mechanism exactly backwards.

A Faster Alternative: Let Sugar Do the Work

For 4 servings, soaking the seaweed in water with about 4–5 pinches of sugar added, for roughly 10 minutes, achieves the right texture faster than a long plain-water soak would. Sugar's osmotic pressure pulls water into the seaweed's tissue more quickly, so you get the softened texture you're after without needing to extend the soak time — and without giving flavor compounds as much time to leach out in the process.

If you'd rather go with the standard approach, a 10–30 minute soak in plain cold water works fine too — just don't extend it further than that expecting a better result. Either way, use a bowl wide enough that the seaweed can spread out and soak evenly rather than clumping in a narrow container.

What Actually Determines the Final Flavor: Everything After the Soak

Rinse twice, then squeeze thoroughly. Once soaked, rinse the seaweed in clean water a couple of times, then squeeze out the water by hand — firmly, not just a light press. This step isn't optional. Leftover water carries the seaweed's marine, slightly fishy smell straight into the broth, and it's exactly what makes a finished soup taste muddy instead of clean.

Pan-roast it in oil before the stock goes in. Cook the squeezed, rinsed seaweed in sesame or perilla oil, stirring so the oil coats it evenly. This step further reduces any lingering off-smell, and it also means the seaweed integrates smoothly once stock is added instead of the broth separating or tasting disjointed.

Choosing a Broth Base

Swapping plain water for anchovy stock, rice rinse water, or beef bone broth adds real depth. Rice rinse water in particular carries starch that gives the broth a rounder, slightly sweet body and a bit more heft than water alone.

While simmering, skim off the foam that rises to the surface — it's a small step that keeps the finished broth visibly clearer.

Seasoning Without Muddying the Color

Relying on soy sauce alone for seasoning tends to cloud and darken the broth as you add more to compensate for blandness. Balancing it with salt or a fish sauce-style seasoning liquid alongside a smaller amount of soy sauce controls the saltiness without pushing the color and clarity in the wrong direction.

The Trap: Judging the Soup by Soak Time Instead of What Comes After

The costliest assumption here is that soak time is the lever that controls flavor. It isn't — rinsing, squeezing dry, and roasting in oil are what actually determine whether the final broth tastes clean and full or thin and slightly fishy. A shorter, well-managed soak followed by careful rinsing and roasting consistently beats a long soak that skips those steps.
