Stop Microwaving Frozen Rice Cake in One Go. Here's the Method That Actually Works.

Frozen Korean rice cake — garaetteok, the cylindrical kind used in tteokbokki and soup, or jeolpyeon, the sliced, chewier version — comes out of a single long microwave blast either dried out on the outside or still frozen in the middle. The fix isn't more power. It's matching the reheating method to what you're actually making with it.

Steamer: Best Texture, If You Have the Time

Once steam is fully up, add the rice cake and check it at the 5–10 minute mark, pressing with chopsticks or a finger to see if it's softened. Stop heating as soon as it gives. This method takes the longest of the options here, but it comes closest to the fresh, moist texture from a rice cake shop.

Microwave: Fast, But Only in Bursts

Heating it through in one long stretch dries out the surface while the center stays frozen — the classic microwave failure with this food. Thirty-second bursts, checking the texture between each one, avoids that outcome. If it comes out stiff or dry anyway, placing a cup of water in the container alongside the rice cake while reheating restores lost moisture. Unwrap any sealed packaging before it goes in, keep portions small, and eat or cook it immediately once it's warmed through.

Pot: The Right Call for Soup or Stew

For rice-flour-based jeolpyeon specifically, submerge it in water and bring the heat up gradually rather than blasting it on high — that's what lets it cook evenly instead of turning mushy on the outside before the inside catches up. Pull it out the moment it softens.

If garaetteok is headed into tteokbokki or soup, a quick rinse under running water to knock the surface ice off, then straight into the broth, works well. Soaking it in hot water for 5–20 minutes, checking texture as you go, is another option.

Pan: For a Crispy Outside, Soft Inside

Thaw or soften the rice cake first, then pan-fry it for that contrast of a crisp exterior and a soft center. A drizzle of honey or rice syrup afterward rounds out the flavor.

Getting the Storage and Thaw Temperatures Right

None of the reheating methods above matter much if storage went wrong first. Portion rice cake into single-serving amounts wrapped in plastic — some guidance recommends double-wrapping — or sealed in bags, rather than freezing it as one large block. As a starch-based food, it needs airtight storage below -18°C to hold its quality. Refrigerator storage should stay at or below 5°C, and if you're thawing a frozen portion in the fridge, keep that environment below 10°C.

Thawing under running water calls for water below 21°C, with the rice cake's own core temperature kept below 5°C right up until it goes into actual cooking. Repeated freeze-and-rethaw cycles degrade texture, which is exactly why portioning into single servings from the start is worth doing — it keeps you from having to refreeze anything you didn't finish.

A Quick Nutrition Note

Garaetteok runs about 3.92g protein, 0.51g fat, and 43.73g carbs per 100g. Jeolpyeon comes in close — 3.82g protein, 0.80g fat, 43.58g carbs — with 1.20g of fiber, somewhat higher than garaetteok's.

Match the method to what you're making: steamer when you've got the time and want the best texture, the microwave's burst-and-water-cup trick when you're in a hurry, the pot when it's going into soup or tteokbokki, and the pan when you want it crispy. None of it holds up, though, if the freezing and thawing temperatures weren't right in the first place.
