A pot's bottom is scorched black, and the fix everyone shares is the same one: salt, vinegar, and flat beer, left to soak for half an hour. It's cheap, uses what's already in the kitchen, and doesn't leave a chemical smell behind. Try it on the wrong cookware, though, and you're not cleaning it — you're stripping it.
The Twist: This Was Never a One-Recipe Fix
The salt-vinegar-beer soak works because of what each ingredient does chemically — but those same reactions that dissolve burnt residue off stainless steel can discolor aluminum or scratch a nonstick coating. The mixture isn't universally safe just because it's made of kitchen staples; it's specifically suited to a handful of materials, and actively wrong for others.
The Real Chemistry: Why Each Ingredient Works, and Where It Backfires
Salt acts as a natural mild abrasive, physically separating burnt residue from the surface. On hard metal like stainless steel, that abrasion doesn't damage anything. On a nonstick coating, those same grains can leave fine scratches that compromise the coating over time.
Vinegar's acid breaks down hardened protein residue stuck to the pan. Beer's alcohol content dissolves grease as it soaks. Both work well on stainless steel, glass, and ceramic — but that same acidity reacts badly with aluminum specifically, causing discoloration or damaging the metal's natural protective oxide layer.
Which is why the split here isn't about which ingredient is "better" — it's about which cookware can handle the reaction at all.
What Actually Works: Match the Method to the Material
Stainless steel, glass, and ceramic cookware handle the full mixture well. Layer salt, baking soda, and a bit of dish soap over the burnt area, then pour in vinegar, water, and flat beer until the burnt spot is covered. Let it sit for 25 minutes before scrubbing.
New stainless cookware benefits from a pretreatment step first. Wipe the surface down with cooking oil, then boil a vinegar-water solution in it for about 10 minutes — this clears out residual manufacturing abrasives before the pot goes into regular use.
Aluminum cookware should skip this method entirely. The acidic and alkaline ingredients in the mix are exactly what causes discoloration and breaks down aluminum's protective surface — this pot needs a different approach, not a gentler version of the same one.
Nonstick coated pans need the liquid without the salt. Leave the salt out entirely, since its abrasive grains are what damage a coated surface, and apply the vinegar-and-liquid mixture with a soft sponge instead of letting anything gritty touch the coating. General food safety guidance also recommends against steel wool or harsh abrasives on coated cookware — a soft sponge and wooden or silicone utensils are the safer standard, and cookware with peeling coating is worth replacing rather than continuing to scrub.
For especially stubborn burnt residue on cookware that can tolerate it, pour cola over the burnt area until covered and simmer on low heat for about 15 minutes — the acidity and phosphoric acid in cola help dissolve the char loose.
The Trap: The Myth That's Baked Into the Popular Version of This Trick
Baking soda and vinegar together are often assumed to clean better because of the fizzing reaction — but that fizz is neutralization happening in real time, and what's left over is a sodium acetate solution with almost no cleaning power left in either ingredient. If you're using both, use them separately depending on the job, not combined in the same step expecting a bigger effect.
A second trap: never premix this cleaning solution ahead of time and store it in a sealed container. The gas produced as the ingredients react can build enough pressure to rupture a sealed bottle or spray container — mix it fresh, right before you use it, every time.
Finish every version of this with a full rinse under running water so no residue is left behind, and for knives, cutting boards, and dishes specifically, a boiling-water rinse of 30 seconds or more — or a food-safe sanitizer — adds a genuine hygiene step the scrub itself doesn't cover.
Matching the cleaning method to the cookware material isn't an extra precaution here — it's the actual difference between rescuing a pot and quietly ruining it while you thought you were cleaning it.
