Your Braised Tofu Keeps Falling Apart. The Fix Happens Before It Hits the Pan.

This Korean-style braised tofu — dubu-jorim, similar in spirit to a teriyaki-glazed tofu — is a simple enough dish on paper: sear tofu, pour on a savory-sweet sauce, simmer until it's glazed and glossy. It also falls apart or spatters oil across the stove often enough that people write it off as fussier than it looks. Most of that comes down to one step people skip entirely, and it happens before the tofu ever touches the pan.

The Twist: Moisture Is the Actual Cause of Both Splattering and Crumbling

Tofu is packaged and sold sitting in water, and that surface moisture is doing more damage than people realize. Fry tofu with water still clinging to it, and that moisture flashes into steam the instant it hits hot oil — that's the spattering. The same excess moisture also weakens the tofu's structure, making it more likely to crumble the moment you try to flip or move it. Both problems trace back to the same overlooked prep step.

Getting the Tofu Ready

Rinse the tofu briefly, then pat it dry thoroughly with paper towels before cutting it into thick slices. If you want it dry faster, microwave it for 1–2 minutes and pour off the liquid that collects. Salting the tofu is another option — it draws out moisture through osmosis, and as a side benefit, it firms up the texture and helps the tofu take on seasoning more readily later.

The Sauce Ratio for a Smaller Batch

For about 400g of tofu, combine 6 tablespoons of soy sauce and 6 tablespoons of rice wine (or dry sherry as a substitute) with half a cup of water as the base. Add 1 tablespoon of oyster sauce, 1 tablespoon of red pepper flakes, 1 tablespoon of sesame oil, 3/4 tablespoon of minced garlic, and half a tablespoon of sugar.

If the sweetness feels like too much, cut back the sugar and add extra onion and carrot instead — their natural sweetness fills in the gap. A common combination for the vegetables: thinly sliced onion and scallion in roughly equal amounts, with carrot cut into thin strips as a garnish on top.

Searing First, Then a Two-Stage Simmer

Heat oil in a pan over medium to medium-high, and sear the dried tofu on both sides until golden. This crust is what gives the tofu enough structural integrity to hold together once the sauce and simmering start.

Pour the sauce over the seared tofu, and simmer on high heat for 5 minutes, then drop to low heat for another 5 minutes — 10 minutes total, split across two distinct stages. That staged heat is what actually lets the sauce work its way into the tofu rather than just reducing on the surface around it. If you want the seasoning to go even deeper, turn off the heat, cover the pan, and let it rest before a final quick reheat right before serving.

The Trap: Treating This as a Single-Heat, One-Step Dish

The costliest habit here is skipping the moisture-removal step because it feels like an unnecessary extra, then either simmering at one constant heat the whole time or skipping the sear entirely. Every stove and pan runs a little differently, so the first few attempts are worth adjusting the simmer time slightly to match your own setup — but the sequence itself, dry first, sear second, simmer in two stages, is what actually determines whether the tofu holds together and the sauce reaches all the way through.
