You've Been Throwing Away the Most Nutritious Part of the Broccoli

Trimming broccoli usually means keeping the florets and discarding the stem and leaves, on the reasonable assumption that the part everyone eats is where the nutrition lives. Broccoli leaves carry more than double the calcium found in the florets — 173mg per 100g in the leaves compared to 64mg in the florets — and that pattern of overlooked parts holding real nutrition extends to several other vegetables too.

Broccoli: Different Parts, Different Strengths

The stem often carries more beta-carotene and vitamin C than the florets do. The leaves bring carotenoids along with vitamins E and K, on top of that calcium advantage. The florets, for their part, are richer in glucoraphanin — the compound that converts into sulforaphane, broccoli's most talked-about beneficial compound.

Overall, broccoli's vitamin C content runs around 98mg per 100g — roughly double what a lemon carries — and calorie count stays low across every part of the vegetable, at 28–32 kcal per 100g. Given how differently each part contributes, eating the stem and leaves along with the florets captures a meaningfully broader nutrient range than florets alone.

Using them is simple. Peel the tough outer layer off the stem and it works well stir-fried, braised, or added to soup. The leaves hold up fine in a salad or lightly sautéed, similar to how you'd treat any leafy green.

Turnip and Radish Greens: Drying Changes the Nutrition Profile Entirely

Dried turnip or radish greens aren't just a preserved version of the fresh leaves — drying concentrates their nutrient content significantly. Fiber content rises to roughly 3–4 times what the fresh greens carry, and calcium content climbs to somewhere around 10 times what the radish root itself contains. A genuinely different nutritional profile emerges from drying alone, not just a shelf-stable copy of the fresh version.

Sweet Potato Leaves and Shoots

Chlorogenic acid compounds concentrate more heavily in sweet potato's young shoots and leaves than in the root itself. These compounds are associated with inhibiting enzymes involved in carbohydrate digestion — in lab testing, one specific compound (3-caffeoylquinic acid) showed enzyme-inhibiting activity at a notably lower concentration than a reference diabetes medication tested alongside it. Worth being clear about what that means: it's a laboratory finding about the compound's activity, not a basis for treating or managing a health condition with sweet potato leaves.

Pumpkin Seeds and Skin

Pumpkin seed powder has measured at around 33% protein content in research testing — a genuinely substantial protein source for something usually treated as a snack afterthought. Pumpkin skin (the rind, often peeled off and discarded) tested even higher in fiber content than the seed powder did.

The Trap: Assuming the Commonly Eaten Part Is Automatically the Most Nutritious

The costliest assumption here is that whatever part of a vegetable ends up on the plate by habit is where its nutrition is concentrated. Broccoli inverts that assumption directly — the parts usually trimmed away carry real advantages the florets don't. If you're trying an unfamiliar part of a vegetable for the first time, wash it thoroughly and start with a small amount to see how it sits with you, the same caution worth applying to any new food.
