A Potato Peel Removes Pan Rust Through Real Chemistry, Not Just Scrubbing

A cast iron or steel pan left sitting develops that reddish rust bloom, and the instinct is usually to reach for a strong chemical cleaner. A potato peel and some baking soda handle it instead, and not by luck — the mechanism is a genuine chemical reaction between the peel's oxalic acid and the iron oxide making up the rust.

The Chemistry Behind Why This Works

Potato peel contains oxalic acid at roughly 0.1–0.3% by weight. When that acid contacts insoluble iron oxide — rust's main component — it converts it into a water-soluble iron complex, which is what actually separates the rust from the metal surface. Baking soda plays a supporting role here: it combines with the acidic moisture coming off the potato to form a buffered paste, while its granules provide mild abrasive action that physically helps lift the loosened rust layer. The two work together — one chemically, one mechanically.

The Actual Process

All you need is a potato peel, baking soda, a scrub brush, a toothbrush, and some cooking oil. Sprinkle baking soda evenly over the rusted area, then press the cut side of the potato peel firmly against it and let it sit for a while.

After it's had time to work, scrub the area under running water with a toothbrush to clear away the loosened rust. For rust that's built up thick, one round often isn't enough — repeat the process a few times, checking the surface between rounds.

Drying and Re-Coating Are What Keep It From Coming Back

Once the rust is cleared, dry the surface completely and immediately with a cloth. Leftover moisture accelerates oxidation, so any water left sitting on the surface risks new rust forming in the exact same spot. Once it's fully dry, apply a thin, even layer of oil across the entire pan, inside and out, to form a protective barrier.

Taking it a step further, baking the oiled pan in an oven below 200°C for about an hour builds a seasoning layer that meaningfully improves rust resistance going forward. When storing, keep it somewhere dry with airflow, and if stacking multiple pans, slide a sheet of paper between them to prevent surface scratches.

The real value here isn't cutting down on chemical cleaner — it's understanding what actually causes rust and picking a material that addresses that specific mechanism. Beyond removing existing rust, the everyday habit that matters most for cast iron and steel cookware is blocking moisture and keeping that oil layer maintained, rather than the technique used to remove rust once it's already there.
