Regular Dish Soap Can't Remove Fish Odor. Here's the Chemistry Behind Why.

Dishes and cookware from the night before still carry a lingering fishy smell no matter how thoroughly they got scrubbed. The problem isn't technique — it's that regular dish soap is chemically neutral, and the compound responsible for fish odor isn't something a neutral cleaner can break down.

Why Neutral Soap Can't Touch This Specific Smell

Trimethylamine, or TMA, is the main compound behind fish odor, and it's basic (alkaline) in nature. A neutral dish soap has no acidic component to react with it, so no amount of scrubbing with soap alone actually neutralizes the smell — it just moves grease around while the odor compound stays chemically intact.

The Acid-Base Reaction That Actually Works

Vinegar's acetic acid is genuinely acidic, and when it meets basic TMA, an acid-base neutralization reaction breaks the odor compound down chemically — not just masking it. Squeeze dish soap onto a sponge as usual, add a small amount of vinegar, and wash normally. For a pan or cutting board with deeply absorbed fish smell, coating it with the vinegar-soap mix and letting it sit for a few minutes before scrubbing works even better. Both TMA and acetic acid are water-soluble, so a thorough final rinse clears out any lingering vinegar smell along with the neutralized odor compound.

Alternatives When Vinegar Isn't on Hand

Lemon or lime juice mixed into dish soap in small amounts works through the same acid-base mechanism — whichever acidic ingredient happens to be in the fridge does the job. For fish odor at the prep stage rather than the cleanup stage, briefly soaking the fish in milk beforehand helps too: milk's casein protein has a natural affinity for adsorbing odor compounds like TMA before they ever reach the pan. For stains left behind on dishware, letting them sit in water with a small amount of dissolved citric acid before rinsing is another option.

Drying and Storage Decide Whether the Smell Comes Back

Cups and other dishware with a closed bottom take longer to fully dry, which creates exactly the damp conditions bacteria need to regrow — and regrowth brings the odor right back. A dish rack with open drainage at the bottom, or wiping the inside dry with a towel, helps here. Putting anything away in a closed cabinet before it's fully dry risks the odor returning inside the storage space itself; let everything dry completely first, and store items opening-side up. A dedicated sponge just for cups is worth keeping separate too, given how easily lingering odor transfers between sponges and dishware.

Getting rid of fish odor really comes down to matching an acidic ingredient to a basic odor compound, not scrubbing harder. Vinegar, lemon juice, or citric acid — whichever is easiest to reach — covers the actual chemistry involved, and full drying before storage is what keeps that result from undoing itself a day later.
